Simple Easter Dinner Menu for Two

Easy-Fresh-Strawberry-Cake-SlicePlanning a special family holiday dinner is in order during this “stay at home” pandemic. I have found reading through my cookbooks as well as my mom’s, I can come up with something really special, maybe even old fashion or traditional.

Growing up we always had special family holiday dinners. Roast Turkey with all the trimmings at Thanksgiving, Ham or Lamb for Easter, BBQ cookouts for 4th July, etc.  They always seem festive and fun.  It was a simpler time and it was a time when families enjoyed each others company.

For this Easter, since it is just my husband and myself, I made the menu sort of simple and full of our favorite foods.

  • Grilled Lamb
  • Roast Small Potatoes with Rosemary
  • Whiskey and Ginger Carrots
  • Peas and Pearl Onions 
  • Deviled Eggs 
  • Sparkling White Wine
  • Strawberry Cake with Cream Cheese Frosting and Fresh Strawberries on Top, served with fresh coffee

Also, to make this truly a holiday dinner, I am bring out the linens, good china, candles and crystal.  Setting a beautiful table helps to create a festive event, even if it is just the two of you.  Set the mood with wonderful smooth jazz
