Comfort Food for February: Mac and Cheese

                Who doesn’t like Mac and Cheese? No one that I know of. I used to have little cooking competitions with my dad. I always felt like he was cheating because I didn’t know to think outside the box on recipes. To get creative and make it an experience instead of just a meal. Well, after several rounds with dad, I still never won. But I did finally put together my own homemade mac and cheese recipe. Not an exact recipe because I tend to just throw things together and not take measurements. So, what I want you to do is make your own from how I make mine. Have fun with it. I don’t think I have ever had bad mac and cheese. Kind of hard to mess it up. Alright, let’s get started!

Ingredient:

  • Elbow noodles
  • Velveeta cheese
  • Fresh Mozzarella, shredded
  • Fresh Parmesan, shredded
  • Italian Breadcrumbs
  • Bacon cut into small pieces.
  • Ham cut into small cubes.

Now here’s the fun part. Like I said I never measure things out; I kind of just throw it all together. First, you want to cook your bacon. You don’t want to cook it all the way though because you will be putting it in the oven. Set aside to drain. Then, you want to cook your noodles. Make sure you don’t overcook them though. You don’t want them mushy. Once cooked drain in a colander. Do not rinse. You want the noodles hot. While you have the noodles cooking, you can start cutting the block of Velveeta cheese. I normally start with half of it. Cube it and put into large bowl. Dump the hot noodles on top of the cheese. Stir until the cheese is completely melted and noodles are coated. Then mix in as much mozzarella as you want. I only do a little bit. Lastly, mix in the bacon and ham pieces. Make sure you stir it well so that the ham and bacon are mixed evenly through the mac and cheese.  Put into a baking dish and top with breadcrumbs and parmesan. Place in oven at 350 until golden brown on top. Let sit for just a few minutes and then you are ready to serve! Perfect as a meal or a side dish. Whatever your mood is, this mac and cheese will always be there to comfort you!
